Ingredients
  

For the base
  • 2 cups plain Greek yogurt Use full-fat for extra creaminess.
  • 1/2 cup creamy peanut butter Any brand will work.
  • 1/4 cup honey or maple syrup Choose based on preference.
  • 1/4 cup milk Any type of milk.
  • 1 teaspoon vanilla extract For extra flavor.
Optional toppings
  • Chopped nuts For added crunch.
  • Chocolate drizzle Melted for easy application.
  • Fresh berries Add for a fruity twist.

Method
 

Preparation
  1. Line an 8x8-inch baking dish with parchment paper for easy removal later.
  2. In a large mixing bowl, combine the Greek yogurt, creamy peanut butter, honey or maple syrup, milk, and vanilla extract. Whisk or use a hand mixer until smooth and creamy.
  3. Pour the peanut butter yogurt mixture into the prepared baking dish. Spread it evenly with a spatula.
  4. Sprinkle chopped nuts or drizzle melted chocolate on top, if desired.
  5. Cover the dish with plastic wrap and place it in the freezer. Allow it to freeze for at least 3 hours or until solid.
  6. Once frozen, lift the bars out using the parchment paper and cut into squares to serve.

Notes

Using full-fat Greek yogurt provides extra creaminess. For a dairy-free version, use coconut yogurt. Portioning into popsicle molds can be a fun twist. Let them thaw for a few minutes before slicing for easier cutting.
