Preparation
- Line an 8x8-inch baking dish with parchment paper for easy removal later.
- In a large mixing bowl, combine the Greek yogurt, creamy peanut butter, honey or maple syrup, milk, and vanilla extract. Whisk or use a hand mixer until smooth and creamy.
- Pour the peanut butter yogurt mixture into the prepared baking dish. Spread it evenly with a spatula.
- Sprinkle chopped nuts or drizzle melted chocolate on top, if desired.
- Cover the dish with plastic wrap and place it in the freezer. Allow it to freeze for at least 3 hours or until solid.
- Once frozen, lift the bars out using the parchment paper and cut into squares to serve.
Notes
Using full-fat Greek yogurt provides extra creaminess. For a dairy-free version, use coconut yogurt. Portioning into popsicle molds can be a fun twist. Let them thaw for a few minutes before slicing for easier cutting.
