- In a large skillet, heat a tablespoon of oil over medium heat.
- Add the chopped onions and minced garlic. Sauté for about 3-4 minutes until they become translucent and fragrant.
- Add the ground beef or turkey to the skillet. Cook until browned, breaking it up with a spatula as it cooks, approximately 5-7 minutes. Season with salt, pepper, and the optional chili powder, stirring well.
- Once the meat is fully cooked, add in the chopped cabbage, diced tomatoes (with their juice), pinto beans, and corn. Mix everything well and cook for an additional 5-10 minutes, stirring occasionally until the cabbage is slightly tender.
- Remove from heat and layer the mixture into a serving dish. Top with a generous handful of shredded cheddar cheese and Fritos corn chips, creating a crunchy topping that’s so inviting.

Notes
