  • 1 head cabbage, chopped
  • 1 pound ground beef or ground turkey
  • 1 can diced tomatoes (15 oz) with their juice
  • 1 can pinto beans, drained and rinsed (15 oz)
  • 1 cup corn (frozen or canned)
  • 1 bag Fritos corn chips
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon chili powder (optional) for extra spice

Method
 

Preparation
  1. In a large skillet, heat a tablespoon of oil over medium heat.
  2. Add the chopped onions and minced garlic. Sauté for about 3-4 minutes until they become translucent and fragrant.
  3. Add the ground beef or turkey to the skillet. Cook until browned, breaking it up with a spatula as it cooks, approximately 5-7 minutes. Season with salt, pepper, and the optional chili powder, stirring well.
  4. Once the meat is fully cooked, add in the chopped cabbage, diced tomatoes (with their juice), pinto beans, and corn. Mix everything well and cook for an additional 5-10 minutes, stirring occasionally until the cabbage is slightly tender.
  5. Remove from heat and layer the mixture into a serving dish. Top with a generous handful of shredded cheddar cheese and Fritos corn chips, creating a crunchy topping that’s so inviting.
  6. Enjoy warm, garnished with your favorite toppings like sour cream or diced avocados, and share with family!

Notes

Frito Cowboy Cabbage can be stored in the refrigerator for up to 3-4 days. Freeze for up to 3 months. Reheat in the microwave or on the stove, adding a splash of water if necessary.
