Ingredients
  

Base Ingredients
  • 2 cans corn (drained)
  • 1 piece red bell pepper (diced)
  • 1 piece green bell pepper (diced)
  • 1 cup diced red onion
Dressing Ingredients
  • 1 cup mayonnaise
  • ½ cup sour cream
  • ½ teaspoon garlic powder
  • 1 tablespoon apple cider vinegar
  • to taste salt and pepper
Crunchy Topping
  • 1 ½ cups Fritos Fold in just before serving to maintain crunch.
Optional Garnish
  • to taste chopped cilantro or green onions

Method
 

Preparation
  1. Drain the corn and dice the red and green bell peppers and onion.
Mixing Ingredients
  1. In a large bowl, combine the drained corn, diced peppers, and onion.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, sour cream, garlic powder, apple cider vinegar, salt, and pepper. Adjust seasoning to taste.
Combine
  1. Pour the dressing over the corn and vegetable mixture and stir until fully coated.
Add the Crunch
  1. Gently fold in the Fritos before serving.
Serve
  1. Garnish with cilantro or green onions if desired. Enjoy chilled or at room temperature.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge. Keep Fritos separate until serving for optimal crunch.
