Salad Ingredients
  • 1 can chickpeas, drained and rinsed
  • 1 can black beans, drained and rinsed (or kidney beans)
  • 1 tablespoon fresh za'atar (or 1 teaspoon dried za'atar if fresh is unavailable)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ΒΌ medium red onion, finely chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • to taste Salt and pepper

Method
 

Preparation
  1. Start by draining and rinsing the canned beans under cold water to remove excess sodium.
  2. Chop the cherry tomatoes, cucumber, and red onion to the same size for even distribution in the salad.
  3. In a large mixing bowl, combine the drained beans, chopped vegetables, and za'atar.
  4. In a smaller bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour this dressing over the salad and toss gently.
  5. Serve immediately or let it chill in the refrigerator for about 30 minutes to enhance the flavors.

Notes

If using fresh za'atar isn't possible, dried oregano or thyme can be used as substitutes. Add delicate ingredients like cherry tomatoes just before serving to maintain freshness. Avoid over-dressing the salad to prevent sogginess. Refrigerate for up to 3 days but do not freeze.
