- Rinse your fresh raspberries gently under cold water. Pat them dry with a paper towel and set aside in a bowl.
- In a mixing bowl, add the heavy cream, powdered sugar, and vanilla extract. Using a hand mixer, whip on medium speed until soft peaks form—this usually takes about 3–5 minutes.
- Add the mascarpone cheese to the whipped cream mixture. Carefully fold it in using a spatula until well combined.
- In serving glasses, layer the cream mixture, followed by a generous layer of fresh raspberries. Repeat until the glasses are filled, ending with a raspberry layer on top.
- Cover the glasses with plastic wrap or a lid and place them in the refrigerator for at least 1 hour to set.
