  • 1 unit tart shell (pre-baked) You can buy a pre-baked shell or make your own.
  • 1 cup pastry cream Make with milk, sugar, cornstarch, and vanilla.
For the Toppings
  • assorted unit fresh fruits (strawberries, kiwis, blueberries, peaches) Use seasonal fruits for the best flavor.
  • 1/2 cup glaze (apricot or other fruit glaze) Brush over the arranged fruits for a glossy finish.

Method
 

Preparation of the Shell
  1. Prepare your tart shell from scratch or buy a pre-baked shell. If baking from scratch, make sure to blind bake it first and let it cool completely.
Make the Pastry Cream
  1. In a saucepan, whisk together your choice of milk, sugar, and cornstarch over medium heat until it thickens.
  2. Once it thickens, add vanilla extract and let it cool down before spreading it over your tart shell.
Arrange the Fruits
  1. After the pastry cream has cooled, carefully spoon it into the tart shell.
  2. Beautifully arrange your chosen fruits on top, being creative to make it look like a rainbow.
Glazing the Tart
  1. Brush your glaze over the arranged fruits to add shine and preserve freshness.
Chill and Serve
  1. Allow the tart to chill in the refrigerator for at least 1-2 hours before serving.

Notes

For substitutions, feel free to use any fruits depending on what you have. Chill the tart sufficiently for the best taste, and let the pastry cream cool completely to avoid a soggy bottom.
