Ingredients
  

  • 2 cups of sweet corn fresh or canned
  • 1 can 15 oz of black beans, drained and rinsed
  • 1 ripe avocado diced
  • 1 cup of cherry tomatoes halved
  • 1 small red onion finely chopped
  • 1 bell pepper any color, diced
  • Juice of 1 lime
  • Salt and pepper to taste
  • Optional: Chopped fresh cilantro and jalapeño

Instructions
 

  • Prepare the Corn: If using fresh corn, boil or grill the corn until tender, then let it cool. If using canned corn, simply drain it.
  • Drain the Beans: Rinse the black beans under cold water to remove excess sodium and let them drain.
  • Chop the Veggies: Dice the avocado, chop the red onion, and bell pepper, and halve the cherry tomatoes.
  • Combine Ingredients: In a large mixing bowl, add the corn, black beans, avocado, tomatoes, red onion, and bell pepper.
  • Dress the Salad: Squeeze fresh lime juice over the salad and season with salt and pepper to taste. Toss gently to combine all the ingredients.
  • Garnish: If using, sprinkle chopped cilantro and jalapeño on top for an extra burst of flavor.
