  • 3 cups fresh cherries, pitted Use sweet or tart cherries depending on your preference.
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup granulated sugar Divided, reserve 2 tablespoons for later.
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract Optional for added flavor.
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • powdered sugar for dusting Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch pie dish or a similar-sized baking dish with butter or cooking spray.
  3. Rinse the cherries in cold water and remove the pits.
Mixing the Batter
  1. In a mixing bowl, whisk together the eggs, reserved granulated sugar, milk, vanilla extract, almond extract (if using), flour, and salt until smooth and well combined.
Baking
  1. Pour about half of the batter into the greased baking dish. Scatter the pitted cherries evenly on top, and then pour the remaining batter over the cherries.
  2. Place in the oven and bake for 35-40 minutes, until the clafoutis is golden brown and slightly puffed.
Serving
  1. Remove from the oven and let it cool slightly. Dust with powdered sugar before cutting into wedges and serving warm or at room temperature.

Notes

To elevate your clafoutis experience, serve it with a dollop of freshly whipped cream or a scoop of vanilla ice cream. You can also try different fruits like blueberries or sliced peaches for added variety.
