  1. Gather your ingredients ensuring everything is fresh and ready to go.
  2. Cut the cantaloupe in half, remove the seeds, and scoop out the flesh. Dice into bite-sized pieces.
  3. Wash the cucumber and cut off both ends. Dice into small, even pieces.
  4. Thinly slice the red onion to add a gentle kick.
  5. In a large mixing bowl, combine diced cantaloupe, cucumber, red onion, and mint leaves.
  6. Squeeze the lime juice over the mixture and sprinkle with salt and pepper to taste.
  7. Gently mix everything to combine the flavors, then serve immediately or chill for 15 minutes for a refreshing cold salad.

Notes

Always use ripe, fresh fruit and veggies for best flavor. Avoid over-salting to retain the sweetness. Store in an airtight container in the refrigerator for up to 2 days, but do not freeze as it loses its crunch.
