Ingredients
  

  • 2 hard-boiled eggs
  • 1 ripe avocado
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 red onion thinly sliced
  • Olive oil
  • Salt and pepper to taste
  • Lemon juice optional

Method
 

  1. Start by boiling your eggs! Place them in a saucepan, cover with water, and bring to a boil. Once boiling, lower the heat and let them simmer for about 10-12 minutes. After that, transfer them to an ice bath to cool.
  2. While your eggs are cooking, wash and prepare your veggies. Slice the cherry tomatoes in half, dice your cucumber, and thinly slice the red onion.
  3. Next, take your avocado, cut it in half, remove the pit, and scoop the flesh out. Slice the avocado to your desired size.
  4. In a large mixing bowl, combine the mixed salad greens, cherry tomatoes, diced cucumber, and red onion. Toss them gently to combine.
  5. Peel and slice the cooled hard-boiled eggs and arrange them on top of the mixed salad.
  6. Finally, add the sliced avocado on top as well. Drizzle with olive oil, squeeze some lemon juice, and sprinkle salt and pepper to taste. Toss gently and serve immediately!
