Ingredients
  

For the filling
  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
For the roll-ups
  • 8 slices bread (white or whole grain) Thick slices like Texas toast or brioche are recommended.
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter (for cooking) Add more as needed for cooking.
For serving
  • Maple syrup Optional for drizzling.
  • Fresh fruit Optional for serving.

Method
 

Preparation
  1. In a medium bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until well combined.
  2. Take each slice of bread and flatten it gently with a rolling pin.
  3. Spread about 1 tablespoon of the cream cheese mixture on one end of each flattened slice. Roll the bread tightly, ensuring the filling stays inside.
Cooking
  1. In a shallow bowl, whisk together the eggs, milk, and ground cinnamon until frothy.
  2. In a large skillet, melt 1 tablespoon of butter over medium heat.
  3. Dip each rolled bread piece into the egg mixture, allowing excess to drip off before placing it in the skillet seam side down. Cook until golden brown, about 2-3 minutes per side.
  4. Repeat the process with the remaining rolls, adding more butter as needed.
Serving
  1. Once cooked, allow the roll-ups to cool slightly before dusting with powdered sugar and serving with maple syrup and fresh fruit!

Notes

Store leftover roll-ups in an airtight container in the refrigerator for up to 3 days. To reheat, microwave for a few seconds or warm in a skillet. You can freeze extras for a quick breakfast later.
