Preparation
- In a medium bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until well combined.
- Take each slice of bread and flatten it gently with a rolling pin.
- Spread about 1 tablespoon of the cream cheese mixture on one end of each flattened slice. Roll the bread tightly, ensuring the filling stays inside.
Cooking
- In a shallow bowl, whisk together the eggs, milk, and ground cinnamon until frothy.
- In a large skillet, melt 1 tablespoon of butter over medium heat.
- Dip each rolled bread piece into the egg mixture, allowing excess to drip off before placing it in the skillet seam side down. Cook until golden brown, about 2-3 minutes per side.
- Repeat the process with the remaining rolls, adding more butter as needed.
Serving
- Once cooked, allow the roll-ups to cool slightly before dusting with powdered sugar and serving with maple syrup and fresh fruit!
Notes
Store leftover roll-ups in an airtight container in the refrigerator for up to 3 days. To reheat, microwave for a few seconds or warm in a skillet. You can freeze extras for a quick breakfast later.
