Ingredients
  

For the Filling
  • 1 lb flank or sirloin steak, thinly sliced Choose a well-marbled cut for tenderness.
  • 2 medium onions, caramelized Cook until golden for best flavor.
  • 1 cup Swiss or Gruyère cheese, shredded This adds melty goodness to the pinwheels.
  • 2 cloves garlic, minced Add garlic shortly before the onions finish cooking.
  • to taste olive oil For cooking the onions and pinwheels.
  • to taste salt and pepper
  • a few sprigs fresh thyme, optional For garnish and added flavor.

Method
 

Preparation
  1. In a skillet over medium heat, add a drizzle of olive oil and toss in the sliced onions. Cook until they are golden and caramelized, about 15 minutes. Add garlic shortly before they finish cooking and season with salt and pepper.
  2. Gently pound the steak slices to flatten them for easier rolling.
  3. Lay out the sliced steak on a flat surface. Spread an even layer of caramelized onions over each piece of steak, sprinkle generously with the shredded cheese, and add a pinch of fresh thyme if desired.
  4. Starting from one end, roll the steak tightly into a pinwheel shape. Use toothpicks to secure the rolls if needed.
Cooking
  1. In the same skillet, heat a bit more olive oil. Place the pinwheels seam-side down and cook for about 3-4 minutes on each side until nicely browned and the cheese is melted.
Serving
  1. Slice the pinwheels into rounds, serve hot, and enjoy the burst of flavors!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in the oven at 350°F for about 10-15 minutes.
