French Onion Potatoes

  • 2 lbs potatoes (Yukon Gold or Russet, peeled and sliced) Use waxy potatoes for creaminess.
  • 2 large onions (thinly sliced) Caramelize for best flavor.
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cups beef or vegetable broth Choose based on preference.
  • 1 teaspoon thyme (dried) Enhances flavor.
  • 1 cup shredded cheese (Gruyère or Swiss) Can mix with cheddar or mozzarella.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions. Cook for about 15-20 minutes, stirring occasionally, until they turn golden and caramelized.
  3. Once the onions are caramelized, add the beef or vegetable broth and thyme, making sure to scrape up any delicious bits stuck to the pan. Season with salt and pepper.
  4. In a greased baking dish, start layering half of the sliced potatoes. Pour half of the onion mixture over them, then add a layer of cheese. Repeat with the remaining potatoes, onion mixture, and finish with a generous layer of cheese on top.
Cooking
  1. Cover the baking dish with aluminum foil and bake for 30 minutes.
  2. Remove the foil and bake again for another 15-20 minutes, until the cheese is bubbly and golden.
  3. Remove from the oven, and sprinkle with fresh parsley before serving. Enjoy!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Freeze for up to 2 months. Reheat in oven at 350°F (175°C).
