Caramelizing the Onions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the thinly sliced onions, sprinkle with salt, pepper, and sugar. Stir frequently for about 20-25 minutes until the onions are golden and caramelized.
Preparing the Pastry
- While the onions cook, preheat your oven to 400°F (200°C).
- Roll out your puff pastry onto a baking sheet lined with parchment paper. Create a slight border around the edges, leaving the center free for filling.
- Once the onions are ready, sprinkle half of the Gruyère cheese in the center of the pastry sheet. Pile the caramelized onions on top, then add the remaining cheese and the thyme.
- Gently fold the edges of the pastry over the filling, creating pleats. Brush the edges with the beaten egg for a golden finish.
Baking
- Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
