  • 4 pieces chicken breasts
  • 2 cans French onion soup
  • 1 cup shredded cheese (mozzarella, cheddar, or blend) Choose your favorite type of cheese.
  • 1 cup cooked rice
  • 1 piece onion, sliced
  • to taste Salt and pepper
  • to taste tablespoons Olive oil For sautéing and marinating chicken.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Season the chicken breasts with salt and pepper. Optionally, marinate in olive oil for extra flavor.
  3. In a skillet, heat olive oil over medium heat. Add sliced onions and sauté until golden brown and caramelized, about 10 minutes.
  4. In a large mixing bowl, combine the sautéed onions, cooked rice, and one can of French onion soup. Mix until well-coated.
  5. In a greased casserole dish, spread the mixture evenly. Place seasoned chicken breasts on top and pour the remaining can of French onion soup over it.
  6. Sprinkle shredded cheese generously over the dish.
Baking
  1. Cover the casserole with aluminum foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
Serving
  1. Allow the casserole to cool slightly before serving. Enjoy with family or friends.

Notes

For a quicker option, you can use shredded rotisserie chicken. Keep an eye on the chicken during the final baking stage to avoid dryness. The traditional French onion flavor shines best when using the classic ingredients.
