For the filling
  • 1 cup fresh blueberries Use fresh blueberries for the best flavor. Frozen blueberries can be used if thawed and drained.
  • 1 tablespoon sugar
  • 1 teaspoon lemon juice
  • 1 pinch salt
For the crust
  • 1 pre-made pie crust pre-made pie crust You can use homemade crust if preferred.
  • 1 egg egg (for egg wash) For a vegan option, use almond milk.
  • 1 tablespoon flour For dusting.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine fresh blueberries, sugar, lemon juice, and a pinch of salt. Toss gently and let sit.
  3. On a lightly floured surface, roll out the pre-made pie crust into a rough circle of about 12 inches in diameter.
Assembling and Baking
  1. Spoon the blueberry mixture into the center of the crust, leaving a 2-inch border.
  2. Fold the edges of the crust over the blueberries, making pleats around the edge.
  3. Beat the egg and brush it over the crust to achieve a golden finish.
  4. Bake for 25-30 minutes or until the crust is golden brown and the filling is bubbly.
  5. Allow to cool slightly before slicing. Serve warm with vanilla ice cream or whipped cream.

Notes

Store in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze wrapped tightly in plastic wrap and foil for up to a month.
