Preparation
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine fresh blueberries, sugar, lemon juice, and a pinch of salt. Toss gently and let sit.
- On a lightly floured surface, roll out the pre-made pie crust into a rough circle of about 12 inches in diameter.
Assembling and Baking
- Spoon the blueberry mixture into the center of the crust, leaving a 2-inch border.
- Fold the edges of the crust over the blueberries, making pleats around the edge.
- Beat the egg and brush it over the crust to achieve a golden finish.
- Bake for 25-30 minutes or until the crust is golden brown and the filling is bubbly.
- Allow to cool slightly before slicing. Serve warm with vanilla ice cream or whipped cream.
Notes
Store in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze wrapped tightly in plastic wrap and foil for up to a month.
