Preparation
- Gather all your ingredients. Ensure the roast beef is sliced thinly and the cheese slices are ready to go.
- Spread butter evenly on one side of each slice of sourdough bread for a golden-brown crust.
Assembly
- On the non-buttered side of two slices, place a slice of Swiss cheese, followed by a generous amount of roast beef, and top it off with another slice of Swiss cheese. Place the remaining slices of bread on top (buttered side out).
Cooking
- Heat a skillet over medium heat. Once hot, place the sandwiches into the skillet and cook for about 3-4 minutes until the bread is golden brown. Flip the sandwiches and continue grilling for another 3-4 minutes.
- While the sandwiches are grilling, heat the beef broth in a small pot until sizzling.
Serving
- Once your sandwiches are perfectly golden and cheesy, cut them in half and serve alongside a small bowl of hot beef broth for dipping. Add horseradish on the side if you like some heat.
Notes
For a lighter option, substitute the roast beef with turkey or chicken. Keep an eye on your bread while grilling to prevent burning. Store leftovers in an airtight container for up to three days; reheat in a skillet or oven for best results.
