French Chicken Casserole in the Norman Style

  • 1 whole whole chicken, cut into pieces Use organic chicken for Halal-friendly options.
  • 2 tablespoons butter
  • 1 cup apple cider
  • 1 cup heavy cream
  • 2 cups cooked rice or noodles for serving
  • Salt and pepper to taste Salt and pepper to taste

  • 1 onion onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced Use cremini or shiitake for varied flavors.
Garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet or Dutch oven, melt the butter over medium heat. Add the chicken pieces and sear until golden brown on all sides, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes. Then add the sliced mushrooms and cook until softened, around 5 minutes.
  4. Pour in the apple cider, scraping up any bits stuck to the bottom of the skillet. Bring it to a simmer, allowing it to reduce slightly for about 5 minutes.
  5. Stir in the heavy cream, and season with salt and pepper to taste. Nestle the seared chicken pieces back into the skillet, ensuring they are coated in the sauce.
  6. Transfer the skillet to the preheated oven and bake uncovered for 30 minutes, or until the chicken is cooked through and tender.
  7. Remove from the oven and serve the casserole over cooked rice or noodles. Top with fresh thyme for garnishing and enjoy!

Notes

If you have leftovers, the casserole can be stored in an airtight container for up to 3-4 days in the refrigerator or frozen for up to 3 months. Reheat in a preheated oven at 350°F (175°C) for about 20 minutes.
