  • 1 cup unsalted butter, softened Use room temperature butter for the best results.
  • 3/4 cup powdered sugar
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
Optional Topping
  • to taste Fleur de sel Optional, for sprinkling on top.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the softened unsalted butter and powdered sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg yolk and vanilla extract until well combined.
  4. Gradually add the flour and salt, mixing until just combined.
  5. Scoop tablespoon-sized portions of dough, roll into balls, and place them on the prepared baking sheet, spaced about 2 inches apart. Flatten each ball gently.
  6. Sprinkle a pinch of fleur de sel on top if desired.
  7. Bake for about 12-15 minutes, or until the edges are lightly golden.
  8. Allow to cool on the baking sheet before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Unbaked dough balls can be frozen for up to two months. Bake from frozen with added time.
