Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream the softened unsalted butter and powdered sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg yolk and vanilla extract until well combined.
- Gradually add the flour and salt, mixing until just combined.
- Scoop tablespoon-sized portions of dough, roll into balls, and place them on the prepared baking sheet, spaced about 2 inches apart. Flatten each ball gently.
- Sprinkle a pinch of fleur de sel on top if desired.
- Bake for about 12-15 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. Unbaked dough balls can be frozen for up to two months. Bake from frozen with added time.
