Ingredients
  

Canned Ingredients
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 can cream of chicken soup
Other Ingredients
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup cooked rice
  • 1 teaspoon taco seasoning
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the black beans, corn, diced tomatoes, cream of chicken soup, rice, shredded cheese, and taco seasoning. Mix well until all the ingredients are evenly incorporated.
  3. Grease a 9x13 inch baking dish to prevent sticking and make cleanup easier.
  4. Pour the combined mixture into the greased baking dish, spreading it out evenly.
Baking
  1. Place the dish in the preheated oven and bake for 25-30 minutes until heated through and the cheese is bubbly and slightly golden.
Serving
  1. Once baked, remove from the oven and allow to cool slightly before serving. Enjoy with your favorite garnishes!

Notes

To store leftovers, let cool completely before transferring to an airtight container. Refrigerate for up to 3-4 days or freeze for up to 3 months.
