For the Cupcakes
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 2-3 drops pink food coloring

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a medium bowl, combine the flour, baking powder, baking soda, and salt. Whisk together and set aside.
  3. In a larger mixing bowl, mix the oil, sugar, and eggs until well combined. Add the buttermilk and vanilla extract, stirring until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Add 2-3 drops of pink food coloring to your batter, and mix until you achieve the desired shade.
  6. Spoon the batter into each cupcake liner, filling them about two-thirds full.
Baking
  1. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
  2. Once baked, allow cupcakes to cool completely.
Frosting
  1. Decorate with sweet vanilla frosting once completely cool!

Notes

Store cupcakes in an airtight container at room temperature for up to 3 days. Freeze without frosting for up to 2 months.
