Preparation
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a medium bowl, combine the flour, baking powder, baking soda, and salt. Whisk together and set aside.
- In a larger mixing bowl, mix the oil, sugar, and eggs until well combined. Add the buttermilk and vanilla extract, stirring until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Add 2-3 drops of pink food coloring to your batter, and mix until you achieve the desired shade.
- Spoon the batter into each cupcake liner, filling them about two-thirds full.
Baking
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
- Once baked, allow cupcakes to cool completely.
Frosting
- Decorate with sweet vanilla frosting once completely cool!
Notes
Store cupcakes in an airtight container at room temperature for up to 3 days. Freeze without frosting for up to 2 months.
