Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder Ensure freshness for optimal fluffiness.
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined.
  3. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to over-mix; some lumps are fine!
  4. Heat a non-stick skillet over medium heat, adding a little butter if necessary.
Cooking
  1. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface.
  2. Flip and cook for another 1-2 minutes until golden brown.
  3. Enjoy your fluffy pancakes immediately with your choice of toppings, or keep them warm in a low-heat oven while finishing the rest of the batter.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat by toasting, microwaving, or warming in a skillet with butter.
