Preparation
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to over-mix; some lumps are fine!
- Heat a non-stick skillet over medium heat, adding a little butter if necessary.
Cooking
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface.
- Flip and cook for another 1-2 minutes until golden brown.
- Enjoy your fluffy pancakes immediately with your choice of toppings, or keep them warm in a low-heat oven while finishing the rest of the batter.
Notes
Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat by toasting, microwaving, or warming in a skillet with butter.
