Preparation
- Carefully separate the egg whites and yolks into two separate bowls. Ensure no yolk gets into the egg whites.
- In the bowl with the yolks, add milk, vanilla extract, and sugar. Whisk together until well combined.
- Gently sift in the all-purpose flour and baking powder into the yolk mixture. Mix until smooth, but be careful not to overmix.
Whipping and Combining
- In a separate clean bowl, use an electric mixer to beat the egg whites until they form stiff peaks (about 3-5 minutes).
- Carefully fold the whipped egg whites into the yolk mixture. Take your time to keep all the airy goodness.
Cooking
- Preheat a non-stick skillet over low heat and add a small amount of butter.
- Using a ½-cup measuring cup, scoop the batter and pour it into the skillet. Optionally make a double stack with another cup of batter on top.
- Cover with a lid and cook for about 4–5 minutes until the bottom is golden brown. Flip and cook for another 3–4 minutes.
Serving
- When golden brown, gently transfer the fluffy pancakes to a plate. Top with your preferred toppings, and enjoy!
Notes
For best results, use room temperature eggs and take care while folding the mixtures to retain the air. If you have leftovers, store them in an airtight container for up to 2 days, or freeze for up to a month.
