Preparation
  1. Separate the egg whites from the yolks into two separate bowls.
  2. In the bowl with the egg yolks, add the milk and vanilla extract, whisk until well combined, then sift in the flour and baking powder, mixing until smooth.
  3. Using a mixer, whip the egg whites until soft peaks form, then gradually add the sugar and continue to whip until stiff and glossy.
  4. Gently fold the egg whites into the yolk mixture in batches, being careful not to deflate the airy mix.
Cooking
  1. Preheat a non-stick skillet over low heat and add butter.
  2. Spoon a portion of the batter into the skillet for each pancake, cover with a lid, and cook for 4-5 minutes until golden and risen.
  3. Carefully flip the pancakes and cook for another 3-4 minutes.
  4. Transfer your fluffy pancakes to a plate and dust with powdered sugar.
Serving
  1. Serve with maple syrup or your choice of toppings.
