- Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish with butter or line it with parchment paper.
- In a large mixing bowl, whisk together the melted butter, erythritol, and vanilla extract until well combined.
- Add the eggs one at a time, mixing well before adding the next.
- Gradually sift the cocoa powder, baking powder, and salt into the wet mixture, stirring until thoroughly combined.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove from the oven and allow it to cool for about 15-20 minutes. Cut into squares and enjoy!
Notes
For a delightful touch, dust with powdered erythritol or serve with strawberries. Store in an airtight container in the refrigerator for up to five days, or freeze wrapped in plastic for up to three months.
