Pancake Ingredients
  • 1 cup cottage cheese Ensure it's Halal-certified.
  • 4 large eggs
  • 1/2 cup oats Can use finely ground almond flour or whole grain oats.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • as needed Butter or oil for frying

Method
 

Preparation
  1. In a large bowl, combine cottage cheese, eggs, oats, baking powder, salt, and vanilla extract. Blend until smooth.
  2. Heat a non-stick skillet over medium heat and add butter or oil to prevent sticking.
Cooking
  1. Pour about 1/4 cup of batter for each pancake into the skillet. Cook for 2-3 minutes until bubbles form and edges look set.
  2. Flip the pancakes and cook for another 2 minutes until golden brown.
  3. Repeat with the remaining batter.
Serving
  1. Serve warm with toppings like syrup, fresh berries, or yogurt.

Notes

Store pancakes in an airtight container in the fridge for up to 3 days or freeze between layers of parchment paper for up to 2 months. Reheat in the microwave or skillet.
