- In a large bowl, combine cottage cheese, eggs, oats, baking powder, salt, and vanilla extract. Blend until smooth.
- Heat a non-stick skillet over medium heat and add butter or oil to prevent sticking.
Cooking
- Pour about 1/4 cup of batter for each pancake into the skillet. Cook for 2-3 minutes until bubbles form and edges look set.
- Flip the pancakes and cook for another 2 minutes until golden brown.
- Repeat with the remaining batter.

Notes
