Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the cocoa powder, sugar, baking powder, and salt until well combined.
- Crack the eggs into the bowl and pour in the vanilla extract. Stir until everything is smoothly combined.
- If adding chocolate chips, fold them into the batter at this stage.
- Use a tablespoon or cookie scoop to drop generous amounts of cookie dough onto a parchment-lined baking sheet, leaving space between each scoop.
Baking
- Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges are set and the centers are slightly soft.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Serve with ice cream or warm chocolate sauce, and enjoy with cold milk or coffee. Store in an airtight container for 3-4 days or freeze for up to three months.
