Ingredients

  • 1 cup unsweetened cocoa powder Use high-quality cocoa powder for best flavor.
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 3 large eggs
  • 1 teaspoon vanilla extract
Optional Ingredients
  • 1 cup chocolate chips For extra chocolatey goodness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the cocoa powder, sugar, baking powder, and salt until well combined.
  3. Crack the eggs into the bowl and pour in the vanilla extract. Stir until everything is smoothly combined.
  4. If adding chocolate chips, fold them into the batter at this stage.
  5. Use a tablespoon or cookie scoop to drop generous amounts of cookie dough onto a parchment-lined baking sheet, leaving space between each scoop.
Baking
  1. Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges are set and the centers are slightly soft.
  2. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve with ice cream or warm chocolate sauce, and enjoy with cold milk or coffee. Store in an airtight container for 3-4 days or freeze for up to three months.
