  • 1 cup almond butter You can substitute with sun butter for a nut-free option.
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chunks Ensure they are Halal-certified if needed.
  • 1 large egg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, add the almond butter, brown sugar, granulated sugar, and the egg. Mix until smooth and creamy.
  3. Stir in the vanilla extract, then sprinkle in the baking soda and salt. Mix until well combined.
  4. Fold in the dark chocolate chunks until evenly distributed.
  5. Pour the mixture into the prepared baking pan, spreading it evenly.
Baking
  1. Bake in the preheated oven for about 20-25 minutes, or until edges are set and center is slightly soft.
  2. A toothpick inserted should come out mostly clean.
Cooling
  1. Let the bars cool in the pan for about 10 minutes.
  2. Lift them out using the parchment paper and cool completely on a wire rack before cutting into squares.

Notes

For an extra touch, consider topping with a sprinkle of sea salt or a drizzle of honey. Store in an airtight container; they last up to a week in the refrigerator or 3 months in the freezer.
