Ingredients
  

For the Carnitas
  • 3-4 lbs boneless pork shoulder, cut into big chunks
  • 1 tablespoon salt
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 1 whole onion, quartered
  • 4 cloves garlic, minced
  • 1-2 pieces jalapeƱos, sliced (optional for heat) adjust based on heat preference
  • 2-3 pieces limes, juiced
  • 1 cup orange juice
  • fresh cilantro (for garnish)
  • tacos or tortillas (for serving)

Method
 

Preparation
  1. Start by cutting the pork shoulder into large chunks and seasoning it generously with salt, cumin, and oregano.
  2. Place the seasoned meat into your crockpot and add the quartered onion, minced garlic, and jalapeƱos.
  3. Pour the lime juice and orange juice over the meat to infuse flavor during cooking.
  4. Cover the crockpot and set it on low for about 8 hours, or until the meat is fork-tender and shreds easily.
  5. Once done, remove the meat from the crockpot, shred it with two forks, and return it to the pot. Mix it well with the flavorful juices.
  6. Serve the shredded carnitas in tacos or tortillas, garnishing with fresh cilantro and any desired toppings.

Notes

Use a well-marbled cut of meat for maximum tenderness and flavor. Feel free to customize the spices and toppings to your taste. Leftovers can be stored in an airtight container for up to 4 days, or frozen for up to 3 months.
