  • 1/2 cup shredded carrots
  • 1/2 cup red bell pepper, sliced
  • 1/4 cup sesame seeds For topping.
  • 1/4 cup green onions, chopped
Dressing Ingredients
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil Can substitute with good olive oil for a different flavor.
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar

Preparation
  1. Start by shredding your cooked chicken into bite-sized pieces. Prepare the mixed greens by rinsing and drying them thoroughly. Slice the red bell pepper and chop the green onions.
Make the Dressing
  1. In a medium bowl, whisk together the soy sauce, sesame oil, honey, and rice vinegar. This mixture will tie your flavors together beautifully.
Combine the Salad
  1. In a large bowl, combine the shredded chicken, mixed greens, shredded carrots, sliced bell pepper, and chopped green onions. Toss them together lightly to ensure an even distribution.
Dress the Salad
