Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until fluffy and light (about 2-3 minutes).
  4. Mix in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Fold the colorful sprinkles into the dough, ensuring they’re evenly distributed.
Baking
  1. Using a cookie scoop or tablespoon, drop the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  2. Top with a few extra sprinkles if desired.
  3. Place in the preheated oven and bake for 10 to 12 minutes or until the edges start to turn golden.
  4. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to wire racks to cool completely.

Notes
