  • 1 cup chocolate chips or jam Use your choice of filling
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add in the egg and vanilla extract, mixing until fully combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry mixture into the wet ingredients, stirring until a dough forms.
  6. Scoop a tablespoon of dough into your palm, flatten it slightly, and place a teaspoon of chocolate chips or jam in the center.
  7. Fold the dough over to enclose the filling, forming a pocket. Seal the edges well.
Baking
  1. Place your cookie pockets on a parchment-lined baking sheet and bake in the preheated oven for 12-15 minutes, or until golden brown.
  2. Allow the cookies to cool on a wire rack before enjoying.
