Preparation
- Preheat your oven to 400°F (200°C).
- In a bowl, toss your drained and rinsed chickpeas with olive oil, salt, and pepper until they are well coated.
Cooking
- Spread the chickpeas evenly on a baking sheet. Bake in the preheated oven for about 20 to 25 minutes, stirring halfway through, until they’re golden and crispy.
- In a large mixing bowl, combine the roasted chickpeas with crumbled feta and dried cranberries.
- Drizzle the mix with lemon juice and toss gently to combine everything well without breaking the feta.
- Serve warm, garnished with fresh parsley if desired.
