  • 1 can chickpeas, drained and rinsed
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup dried cranberries
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice for a fresh kick
  • to taste Salt and pepper
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss your drained and rinsed chickpeas with olive oil, salt, and pepper until they are well coated.
Cooking
  1. Spread the chickpeas evenly on a baking sheet. Bake in the preheated oven for about 20 to 25 minutes, stirring halfway through, until they’re golden and crispy.
  2. In a large mixing bowl, combine the roasted chickpeas with crumbled feta and dried cranberries.
  3. Drizzle the mix with lemon juice and toss gently to combine everything well without breaking the feta.
  4. Serve warm, garnished with fresh parsley if desired.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven for best texture.
