  • 1 cup sweetened condensed milk

Preparation
  1. In a mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Stir everything together until nicely blended.
  2. Cover the bowl with plastic wrap and refrigerate for about 30 minutes to help the mixture firm up.
  3. Once chilled, take small portions of the mixture and roll them into balls about the size of a ping pong ball.
  4. Roll the coconut balls in chopped nuts or dip them in melted chocolate if desired.
  5. Place the coconut balls on a parchment-lined tray and let them set in the refrigerator for an additional 30 minutes.
  6. Serve cold and enjoy!

Notes

For a refreshing pairing, serve alongside fresh fruit or other desserts like brownies. Store in an airtight container in the fridge for up to a week or freeze for three months.
