- In a mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Stir everything together until nicely blended.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes to help the mixture firm up.
- Once chilled, take small portions of the mixture and roll them into balls about the size of a ping pong ball.
- Roll the coconut balls in chopped nuts or dip them in melted chocolate if desired.
- Place the coconut balls on a parchment-lined tray and let them set in the refrigerator for an additional 30 minutes.
