  • 1/2 cup Butter, softened Unsalted butter preferred
  • 2 Large Eggs At room temperature
  • 1 teaspoon Vanilla Extract For added flavor

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the sugar and softened butter until light and fluffy, about 3-5 minutes.
  3. Add in the eggs one at a time, mixing well after each addition. Then add the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt. Slowly mix the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into a greased baking dish, spreading it evenly.
  6. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow it to cool, slice, and serve it warm or chilled with your favorite toppings.

Notes

For a richer flavor, substitute half the granulated sugar with brown sugar. To elevate the dish, try adding different extracts or include nuts or chocolate chips before baking. Store leftovers in an airtight container for up to 3 days.
