Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the softened butter, brown sugar, and granulated sugar. Mix until creamy.
- Beat in the pumpkin puree, egg, and vanilla extract.
Combining Ingredients
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until combined. Be careful not to over-mix!
- Fold in the chocolate chips gently.
Baking
- Use a cookie scoop or a spoon to drop rounded tablespoons of dough onto a lined baking sheet.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Remove cookies from the oven and let them cool for a few minutes on the baking sheet before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze cookies wrapped individually. Thaw at room temperature or warm in the microwave for about 15 seconds before serving.
