Preparation
- Preheat the Oven: start by preheating your oven to 350°F (175°C).
- Prepare the Muffin Tin: line a muffin tin with cupcake liners.
- Cream Butter and Sugar: in a large mixing bowl, cream together the softened butter and sugar until light and fluffy—about 3-4 minutes.
- Add Eggs and Vanilla: beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Mix Dry Ingredients: in another bowl, whisk the all-purpose flour, baking powder, cinnamon, nutmeg, and salt.
- Combine Mixtures: gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined, then fold in the apple or pumpkin puree.
- Fill the Cups: spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake: bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: let the cupcakes cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
- Frost: once cooled, frost with your desired frosting and add sprinkles or decorations, if desired.
Notes
Keep an eye on your cupcakes as they bake. Every oven is different, so the first batch will help you gauge your perfect baking time. Avoid overmixing your batter; this can lead to dense cupcakes.
