Preparation
  1. Preheat the Oven: start by preheating your oven to 350°F (175°C).
  2. Prepare the Muffin Tin: line a muffin tin with cupcake liners.
  3. Cream Butter and Sugar: in a large mixing bowl, cream together the softened butter and sugar until light and fluffy—about 3-4 minutes.
  4. Add Eggs and Vanilla: beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Mix Dry Ingredients: in another bowl, whisk the all-purpose flour, baking powder, cinnamon, nutmeg, and salt.
  6. Combine Mixtures: gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined, then fold in the apple or pumpkin puree.
  7. Fill the Cups: spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  8. Bake: bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
