- Start by trimming any excess fat from the chicken breasts and cutting them into bite-sized pieces.
- Dice the potatoes, slice the carrots, and chop the onion and garlic into uniform pieces.
- In a large crockpot, add the chopped onion and garlic at the bottom.
- Layer the chicken pieces over the onions.
- Toss in the diced potatoes and sliced carrots on top of the chicken.
- Sprinkle the thyme, rosemary, salt, and pepper to your liking.
- Gently pour in the chicken broth, ensuring all ingredients are submerged.
- Set your crockpot on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before cooking is done, add the frozen peas.
- Once the cooking time is up, stir the stew, adjust seasoning if necessary, and serve hot.
