Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well-blended.
- Add the chilled, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, rub the butter into the flour mixture until it resembles coarse crumbs.
- In a separate bowl, whisk the egg and then combine it with the milk and vanilla extract.
- Pour the wet mixture into the dry ingredients and mix until just combined. If using currants or raisins, fold them in gently at this stage.
- Lightly flour your work surface and turn the dough onto it. Knead gently just enough to bring it together, being careful not to overwork the dough. Pat it into a circle about 1-inch thick.
- Using a floured knife or a round cutter, cut out scones from the dough. Place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes, or until they are golden brown.
- Allow cooling slightly before serving. Enjoy warm with butter, jam, or your favorite toppings!
