- 1 1/2 cups chocolate cookie crumbs or crushed graham crackers
- 6 tablespoons unsalted butter melted
- 6 ounces dark chocolate chopped
- 24 ounces cream cheese softened
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- 1 21-ounce can cherry pie filling
- Additional whipped cream optional garnish
- Chocolate shavings optional garnish
Prepare the Crust: In a mixing bowl, combine the chocolate cookie crumbs with melted butter. Press the mixture into the bottom of a springform pan to form a firm crust. Chill in the refrigerator for about 10 minutes.
Melt the Chocolate: In a small saucepan over low heat, melt the chopped dark chocolate until smooth. Once melted, spread the chocolate evenly over the chilled crust and return to the refrigerator to set.
Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until creamy and smooth. Gently fold in the whipped cream until fully incorporated.
Layer the Cheesecake: Spread half of the cheesecake filling evenly over the chocolate layer. Top this layer with half of the cherry pie filling. Repeat with the remaining cheesecake filling and the rest of the cherry pie filling.
Chill and Set: Cover the cheesecake with plastic wrap and refrigerate overnight to allow it to set firmly.
Garnish and Serve: Before serving, top the cheesecake with extra whipped cream and chocolate shavings for an extra touch of elegance.
