  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup white chocolate melted
  • 1 cup raspberry puree
  • Fresh raspberries for garnish optional

Instructions
 

  • Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  • Prepare the crust: In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until fully combined. Press this mixture into the bottom of the prepared pan to create a firm crust.
  • Make the filling: In a large bowl, beat the softened cream cheese, 1 cup sugar, and vanilla extract until smooth and creamy.
  • Add the eggs: Incorporate the eggs, one at a time, mixing well after each addition.
  • Stir in the melted white chocolate: Ensure it’s fully combined and smooth.
  • Layer the mixture: Pour half of the filling into the crust. Then, gently pour in the raspberry puree, swirling it slightly with a knife for a marbled effect. Finally, pour the remaining cream cheese mixture on top.
  • Bake in the preheated oven for about 55 to 60 minutes until it’s set but still slightly jiggly in the center.
  • Cool down: Allow your cheesecake to cool to room temperature before transferring it to the refrigerator to chill for at least 4 hours (or overnight if you can wait!).
