Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish with a little oil or butter.
  3. Place the toasted English muffin halves at the bottom of the dish and spread the diced Canadian bacon evenly over the muffins.
  4. In a large bowl, whisk together the eggs, milk, salt, and pepper until well-blended.
  5. Pour the egg mixture over the muffins and bacon layers, then top with shredded cheese.
  6. Bake for about 45 minutes, or until the egg is set and the top is golden.
  7. Drizzle hollandaise sauce over each serving.
  8. Slice and serve warm, garnished with fresh herbs if desired.

Notes

Ensure English muffins are nicely toasted to prevent sogginess. Can substitute Canadian bacon with chicken or turkey sausage. Watch the baking time closely to avoid a rubbery texture.
