  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cinnamon
Wet Ingredients
  • 0.33 cups unsalted butter, softened
  • 0.5 cups granulated sugar
  • 0.5 cups brown sugar
  • 1 large egg
  • 0.5 cups eggnog (store-bought or homemade)
  • 1 teaspoon vanilla extract
For Decoration
  • 1 cup powdered sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, nutmeg, and cinnamon. Set aside.
  3. In a separate large bowl, cream the softened butter with both sugars until light and fluffy, about 2–3 minutes.
  4. Beat in the egg, eggnog, and vanilla extract until well combined.
  5. Gradually add the dry mixture to the wet ingredients, folding until just combined. Be careful not to over-mix.
  6. Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, leaving space between each cookie.
Baking
  1. Bake in the preheated oven for 10–12 minutes or until edges are lightly golden. The centers may look soft, and that’s okay!
Cooling & Decoration
  1. Once out of the oven, let the cookies sit for about 5 minutes before transferring them to a wire rack to cool completely.
  2. Dust with powdered sugar if desired.

For the best flavor, ensure your spices are fresh. Softened butter helps create fluffier cookies. Avoid overbaking to maintain a soft texture. Optional additions include chocolate chips or chopped pecans for extra flavor.
