Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, nutmeg, and cinnamon. Set aside.
- In a separate large bowl, cream the softened butter with both sugars until light and fluffy, about 2–3 minutes.
- Beat in the egg, eggnog, and vanilla extract until well combined.
- Gradually add the dry mixture to the wet ingredients, folding until just combined. Be careful not to over-mix.
- Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, leaving space between each cookie.
Baking
- Bake in the preheated oven for 10–12 minutes or until edges are lightly golden. The centers may look soft, and that’s okay!
Cooling & Decoration
- Once out of the oven, let the cookies sit for about 5 minutes before transferring them to a wire rack to cool completely.
- Dust with powdered sugar if desired.
Notes
For the best flavor, ensure your spices are fresh. Softened butter helps create fluffier cookies. Avoid overbaking to maintain a soft texture. Optional additions include chocolate chips or chopped pecans for extra flavor.
