Ingredients

For the crust
  • 1.5 cups Graham cracker crumbs
  • 0.25 cups Granulated sugar
  • 0.5 cups Unsalted butter, melted
For the filling
  • 16 oz Cream cheese, softened (2 packages of 8 oz each)
  • 2 large Eggs
  • 1 cup Eggnog
  • 1 tsp Vanilla extract
  • 0.5 tsp Ground nutmeg
  • 0.5 tsp Ground cinnamon
  • to taste Whipped cream (for topping, optional)
  • to taste Nutmeg or cinnamon (for garnish, optional)

Method

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press this mixture firmly into the bottom of a greased 9x9 inch baking pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the eggs, eggnog, vanilla extract, ground nutmeg, and ground cinnamon. Mix until combined and smooth.
  4. Pour the filling over the crust, spreading evenly with a spatula.
Baking
  1. Bake in the preheated oven for about 30-35 minutes or until the center is set and slightly jiggles when you shake the pan.
Cooling
  1. Once baked, remove from the oven and allow to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight to set.
Serving
  1. Before slicing, top with whipped cream, a sprinkle of nutmeg or cinnamon, and cut into bars. Serve chilled.

Notes

Use room temperature ingredients for added creaminess. Avoid overmixing the filling to prevent cracks in the bars. Chill properly for the best set and flavor. Consider dairy-free or low-fat alternatives for a healthier version.
