Preparation
  1. Start by cracking the eggs into a bowl. Add a pinch of salt and pepper to the eggs and whisk until the mixture is fully combined and slightly frothy.
Cooking the Eggs
  1. In a medium-sized skillet, melt about a teaspoon of butter over medium heat. Once the butter is sizzling, pour in the egg mixture.
  2. Let it cook undisturbed for about 30 seconds, then gently stir with a spatula, folding the eggs from the edges towards the center until scrambled and fluffy. This should take about 2-3 minutes; don’t overcook!
Toasting the Bread
  1. While the eggs are cooking, toast the slices of bread in another skillet or toaster to your desired level of crunchiness. If using a skillet, simply add a small amount of butter to the pan and toast until golden brown on both sides.
Assembling the Sandwich
  1. Once the eggs are fully scrambled and the bread is toasted, place the eggs between the two slices of bread.
  2. Feel free to add your desired toppings, such as lettuce or tomato, or even a slice of cheese if you prefer.
