Preparation
- Gather a saucepan, a candy thermometer, a heat-resistant spatula, and a baking sheet lined with parchment paper.
- In a saucepan, combine sugar, light corn syrup, and water. Stir the mixture gently over medium heat until the sugar dissolves.
- Attach the candy thermometer to the saucepan, ensuring it does not touch the bottom. Bring to a boil and cook until the mixture reaches hard crack stage (about 300°F or 150°C), which usually takes about 10-15 minutes.
- Remove from heat and carefully add black food coloring, stirring well to achieve the desired coal appearance.
- Quickly pour the mixture onto the prepared baking sheet and spread into a thin layer. Allow it to cool completely at room temperature for about an hour.
- Once cooled, break the candy into chunks resembling lumps of coal or shape them with your hands for a polished look.
- For extra flair, sprinkle edible glitter over the top of the still-warm candy.

Store the finished candy in an airtight container at room temperature for up to two weeks. Avoid using a microwave or oven to reheat, as this may alter the candy’s texture.
