Vegetable Ingredients
  • 2 medium zucchinis, shredded
  • 1 cup all-purpose flour Can substitute with whole wheat or gluten-free flour
  • 1 cup shredded mozzarella cheese Feel free to substitute with other cheeses
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Italian seasoning
For Baking
  • as needed Cooking spray or olive oil For greasing the baking sheet

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Shred the zucchinis using a grater, then squeeze out excess moisture using a clean dish towel or cheesecloth.
  3. In a large mixing bowl, combine the shredded zucchini, all-purpose flour, mozzarella cheese, Parmesan cheese, eggs, garlic powder, salt, pepper, and Italian seasoning. Stir until fully mixed.
Baking
  1. Lightly grease a baking sheet with cooking spray or olive oil.
  2. Drop spoonfuls of the mixture onto the baking sheet, forming rectangular shapes about 1 inch wide and 4 inches long.
  3. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  4. Once baked, let them cool slightly before serving.

Notes

Store in an airtight container in the refrigerator for 3-5 days. For freezing, place in the freezer for up to 3 months. Reheat in the oven at 350°F (175°C) for about 10 minutes.
