  • 1 medium yellow onion, diced
  • 2 medium zucchinis, sliced Opt for fresh, locally sourced zucchini.
  • 1 tablespoon olive oil For sautéing.

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced yellow onion and minced garlic, sautéing until the onion becomes translucent and fragrant (about 3-4 minutes).
  3. Add the ground beef into the skillet, breaking it apart with a spatula. Cook until browned, stirring occasionally—approximately 5-7 minutes.
  4. Stir in the sliced zucchinis, mixing them well with the beef and onion. Cook them until they are tender, about 5-6 minutes.
  5. Add salt and pepper to taste. Once everything is combined and cooked through, remove from heat and serve warm!

Notes

Use fresh ingredients for the best flavor. For a kick, add a pinch of red pepper flakes while cooking. Leftover zucchini can be used in salads or stir-fries. Pay attention to cooking times to avoid mushy zucchini.
