  • 1 cup lentils (green or brown)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 medium bell pepper, diced
  • 2 cups vegetable broth
  • 1 can diced tomatoes
Seasoning and Garnish
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Method
 

Preparation
  1. Begin by heating a bit of oil in a large pot over medium heat. Once warm, toss in the diced onion and sauté until it becomes translucent, about 5 minutes.
  2. Next, add the minced garlic, and sauté for another minute until fragrant.
  3. Stir in the diced carrots and bell pepper, cooking for about 5 minutes until they start to soften.
  4. Add the lentils to the pot, mixing well with the vegetable medley.
  5. Carefully pour in the vegetable broth and canned diced tomatoes, making sure to mix well.
  6. Add in the cumin, paprika, salt, and pepper to taste, then bring everything to a rolling boil.
  7. Lower the heat to a simmer, cover the pot, and let it cook for 25-30 minutes, until the lentils are tender and the flavors have melded beautifully.
  8. Once ready, give it a good stir, taste for seasoning adjustments, and finish with a sprinkle of fresh parsley or cilantro for a fresh touch.

Notes

For a quicker cooking time, try using red lentils. Feel free to get creative with your veggie choices! Keep an eye on the lentils as they cook to avoid mushiness. Don't forget to taste your hotpot before serving!
