Preparation
- Rinse lentils under cold water and set aside.
Cooking
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for an additional minute.
- Toss in the carrots, celery, and red bell pepper. Sauté until the vegetables begin to soften (about 5-7 minutes).
- Add the rinsed lentils, vegetable broth, thyme, and smoked paprika to the pot. Stir well and bring to a boil.
- Once boiling, reduce the heat to low and simmer for 20 minutes, or until the lentils are tender. Season with salt and pepper to taste.
- If using, stir in kale or spinach just before serving. Cook until wilted (about 2 minutes).
- Ladle the hotpot into bowls and enjoy the warmth and flavor!
Notes
Feel free to swap in different vegetables based on what you have. For added flavor, consider adding a pinch of red pepper flakes or curry powder.
