Ingredients
  

Main Ingredients
  • 1 cup dried lentils (green or brown) Rinsed before use
  • 1 tablespoon olive oil For sautéing
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 red bell pepper, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • a handful kale or spinach (optional) Can be added just before serving

Method
 

Preparation
  1. Rinse lentils under cold water and set aside.
Cooking
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for an additional minute.
  2. Toss in the carrots, celery, and red bell pepper. Sauté until the vegetables begin to soften (about 5-7 minutes).
  3. Add the rinsed lentils, vegetable broth, thyme, and smoked paprika to the pot. Stir well and bring to a boil.
  4. Once boiling, reduce the heat to low and simmer for 20 minutes, or until the lentils are tender. Season with salt and pepper to taste.
  5. If using, stir in kale or spinach just before serving. Cook until wilted (about 2 minutes).
  6. Ladle the hotpot into bowls and enjoy the warmth and flavor!

Notes

Feel free to swap in different vegetables based on what you have. For added flavor, consider adding a pinch of red pepper flakes or curry powder.
